Easy Instant Rava Uttapam

Crispy Instant Semolina Uttapam (Salty Indian Pancakes)

Are you an uttapam lover? Do you find grinding the dosa / uttapam batter cumbersome or due to technical reasons, impossible? If your answer is yes and yes - Tada! Here is presenting to you the most foolproof instant uttapam recipe to curb your sudden South-Indian food cravings with least labor.
Uttapam is a pancake-like piquant dish with toppings, usually made from a special rice-lentil batter. Making the batter requires a couple of days including the fermenting process and can be quite some work, especially for people who like to spend the least time in their kitchens. Rava uttapam is an instant version of it made from semolina (aka rava) and yogurt. I found this foolproof recipe a couple of years back and now it is my go-to recipe whenever I have a south-Indian food craving. The best part is that it is just too quick to make.
It is absolutely easy and for anyone to make and of course yum!





THE RECIPE

Ingredients:
Batter:
 - 1 cup fine semolina
 - 1 cup yogurt
 - 2 green chilies, finely chopped
 - salt to taste
 - water to adjust batter consistency
 - oil to cook

Toppings:
 - 1 onion,  finely chopped
 - 1 tomato, finely chopped
 - 2 tablespoons coriander leaves, chopped (optional)

Instructions:
1. Mix semolina and yogurt in a bowl to form a thick dough-like batter first.
2. Pour little water in at a time and whisk it into a smooth, lump-free batter. The amount of water might change according to the quality of the semolina used. Just make sure the batter is semi-thick like a pancake batter and not very runny.
3. Add salt and chopped green chilies and set aside for 15 minutes.
4. Smear some oil on a hot non-stick pan and pour the batter using ladle and spread. Do not spread too much.
5. When the batter is still wet on top, add the toppings according to choice and gently press with a spatula, so they stick to the batter.
6. Drizzle some more oil to make it crispy and let the base cook well until golden brown.
7. Flip the uttapam gently and cook the toppings until golden brown too. You can flip the uttapam multiple times until it is evenly cooked from both sides and is crispy.
8. Remove the uttapam from the pan and serve hot with chutney or tomato ketchup.

Notes:
 - Do not close the pan with a lid while cooking the uttapam if you like them crispy.
 - Be creative with your toppings. You can practically make them with any toppings just like pizza.
