Easy Masala Toast Sandwich

D-uh, and who else?? *Meeeeeeeeeee*!

If you have followed my blog so far, I don't think it will be new to you that street food in India incorporates bread in their dishes like Germans in their food - a lot! The Masala Toast Sandwich  is particularly popular among students and daily commuters who stop for a quick snack that will keep their taste senses engaged for a longer time.

The name says it all  - I mean Masala and Sandwich; there couldn't have been a more exciting fusion than this. Soft white bread, layered with a spicy potato-chili-coconut filling, topped with a tangy sauce and cheese and toasted in butteerrr. This stuff can't get any better!


I usually only post recipe that I have made at least twice, just to bring out the best. This yummy sandwich was only made last week and for the first time and I'm already posting the recipe because there's pretty much nothing that could go wrong with the recipe. It is that E-A-S-Y.

This recipe does use a lot of butter and could be fatty but then, it's street-food and baked toast sandwiches (do they even exist :O) are no fun to eat. And an extra 30 minute at the gym for this heavenly toast sandwich is not much at all.

THE RECIPE

Ingredients:
Chutney:
 - 2 to 3 green chilies
 - 2 cups coriander leaves, with stalk
 - 5 to 7 mint leaves
 - 2 garlic pods
 - 1 teaspoon lemon juice
 - 3 tablespoons fresh grated or desiccated coconut
 - 1 teaspoon red chili flakes, optional
 - salt to taste

Sandwich:
 - 4 slices white bread /butter toast bread
 - 3 potatoes, boiled and mashed
 - butter to toast
 - 4 cheese slices
 - cucumber slices
 -  tomato slices
 - 4 teaspoons saunth chutney, or tomato ketchup
 - 2 tablespoons oil
 - 1/2 teaspoon turmeric powder, optional
 - sev to garnish

Instructions:
  1. Add all the ingredient listed under 'Chutney' in a mixer and blend it to a thick paste. Sprinkle water sparingly, if necessary.
  2. In a pan, heat oil and add mashed potatoes, turmeric powder and the prepared chutney. Mix well and cook for 2-3 minutes until all ingredients combine well. Adjust the salt seasoning and the filling is ready.
  3. To make the toast sandwich, smear butter generously on one side of the bread. Top it with a thick layer of the potato-chutney filling. Sprinkle some sev on top.
  4. Place tomato and cucumber slices. Top them with a cheese slice and saunth chutney (or ketchup, also optional). Place another bread loaf with butter smeared on the inside. 
  5. Now, in a pan, add some butter and pan toast the layered sandwich in butter until both sides are golden brown and crispy. Alternatively, toast the sandwich in a toaster or sandwich maker (make sure to smear butter on the top sides before toasting).
  6. Cut the sandwich into 4, garnish with grated cheese and sev!!
Enjoy with a cup of tea or just as it is!!!
