Crispy Potato Fritters

Perfect comfort snack for chilly days

Are you familiar with days where you just want to stay home, catch up on a book and look outside the window, while still snuggling in your bed? Most of my days last week have been like this. European winter rains can zero down any persons motivation to get up and go.Well, only if staying at home was a choice!
For gloomy days like this, when you do stay at home or just a winter weekend morning or evening, I like to pair a cup of hot tea with these delicious potato fritters. This just makes my day, no matter what! All the fat from the potatoes and deep frying is just what the body needs on a chilly or bad day. 
This is a simple and quick recipe for when you're in the mood for some hot crisps.



THE RECIPE

Servings: 2

Ingredients:
 - 2 potatoes, peeled and cut in thin slices
 - 1 cup chickpea/gram flour
 - 1 tablespoons rice powder (or semolina)
 - 1 teaspoon red chili powder / pepper powder 
 - 1/2 teaspoon turmeric powder
 - salt to taste
 - 1/2 cup water
 - oil, to fry

Instructions:

1. Combine all ingredients except potatoes and oil in a wide mouthed bowl. Whisk to make a lump-free batter. Adjust the water to achieve a semi-liquid consistency - good enough to coat the potato slices on all sides without dripping.
2.  Heat oil in a deep-bottom heavy pan.
3. Take the potato slices, one at a time and dip well in the chickpea flour batter. Ensure to coat both sides and edges uniformly with the batter.
6. Fry the batter-covered potato slices in oil until golden brown.
7. Serve hot and crispy potato fritters a favorite condiment.
