Healthy Oatmeal-Chickpea Toast

Quick-and-easy breakfast recipe with a sprinkle of Indian flavors!


Thinking about a simple, easy-to-cook breakfast on a lazy weekend morning can be sometimes daunting, More so, when I am trying to watch what I eat. Toasts or Sandwiches are an all-time go-to recipe when there is neither the motivation nor the time to cook. As much as I have started to absolutely savor a European breakfast, time and then, my taste-buds crave for some extra spice to cut the rut. The classic french toast is one of my most favorite breakfast dishes and who doesn't like it? One fine day, I decided to add some 'desi'-ness and came up with this healthy recipe.


This oatmeal-chickpea flour toast recipe replicates the classic french toast with a major twist. It is certainly healthy, full of protein and fiber, free from dairy, takes only 15 minutes in the kitchen and is so delicious - a total winner!

THE RECIPE

Ingredients:
 - 1/2 cup chickpea/gram flour
 - 1/2 cup oatmeal flour, can be made by grinding whole oatmeal
 - 4 bread slices, white or brown
 - 1 onion, chopped
 - 2 green chilies, finely chopped
 - 1/2 teaspoon carom seeds
 - 1/2 teaspoon turmeric powder
 - 1/2 teaspoon red chili powder / pepper powder
 - salt to taste
 - oil to fry, butter can also be used
 - water

Instructions:
1. Mix all the dry ingredients, onions, chilies and seasonings in a shallow bowl with a large mouth (to be able to dip the bread slices in the batter).
2. Pour little water in at a time and whisk it into a smooth, lump-free batter. The batter should be slightly watery.
3. Dip the bread slices in the batter such that they are well coated on all sided and edges uniformly. Place the coated bread slices aside.
4. Heat oil in a non-stick pan and toast the coated bread slices for 3-4 minutes on both sides or until golden brown.
5. Remove it from the pan and serve with tomato ketchup and hot tea or just serve plain.

Notes:
 - Any kind of airy bread can be used for the recipe. Make it vegan by using egg-less bread too.
 - Seasoning with only salt and pepper will also taste as good if you don't want to go looking for chilies or turmeric.
