Aloo-Gobi-Matar Sabzi (Potato-Cauliflower-Peas Sabzi)

 Simple and yummy dish

The combination of potatoes and cauliflower is the magic here. Aloo-Gobi-Matar is a basic dish in Indian households. Probably, every home has a different technique for preparing this. This is a very easy dish, popularly available in Dhaba-style restaurants, usually served with tandoori rotis, paranthas or plain pulav. I made this Punjabi-style vegetable curry with tomatoes as a part of a Punjabi mini-Thali for lunch. It is s perfect blend of spiciness, sourness and natural vegetable tastes and one of my favorite recipes.

THE RECIPE

Ingredients:
  • 2 cups potatoes, peeled and diced
  • 2 cups cauliflower florets
  • 1 cup green peas
  • 1 tomato, medium-sized, finely chopped
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin seeds
  • Pinch of asafoetida (optional)
  • 1/2 teaspoon turmeric powder
  • 1.5 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 2 teaspoons red chili powder
  • Salt to taste
  • 3 cups water
  • 2 teaspoons freshly squeezed lemon juice (optional)
  • Fresh coriander leaves, chopped for garnish
Instructions:
  1. In a large pan, heat oil and add cumin seeds, asafoetida and turmeric powder. Stir for 10 seconds.
  2. Add in the tomatoes, turmeric powder, coriander powder and red chili powder. Stir well. Cover and cook for 5 minutes until the tomatoes are mushy.
  3. To this, add the potatoes, cauliflower, green peas and garam masala. Stir and cook for 1 minute.
  4. Add water and salt and mix well. Cover and cook for 15-20 minutes in high heat. Stir in intervals and check if the vegetables are cooked. 
  5. Cook without lid for about 2 – 3 minutes. Add lemon juice and coriander leaves in the end after removing from heat. 
  6. Serve with hot rotis or pooris.
